- 9 no-boil lasagna noodles
- 8 oz cream cheese (full-fat)
- 2 cups shredded sharp cheddar cheese
- 1 tsp garlic powder
- 2 tsp dried Italian herbs (basil, oregano, thyme)
- 1 cup low-sodium chicken broth
- 2 cups fresh spinach (optional)
Instructions
- Preheat oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.
- Season chicken breasts with salt and pepper; cook in a skillet over medium heat until browned and cooked through (6-7 minutes per side). Let cool slightly before shredding.
- In a bowl, mix cream cheese, cheddar cheese, garlic powder, and dried herbs until smooth.
- Pour half of the chicken broth into the baking dish. Layer three lasagna noodles over it, spread half of the cream cheese mixture on top, add half of the shredded chicken, and repeat layers.
- Finish with remaining noodles and broth; sprinkle extra cheese on top. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until bubbly and golden brown.
