Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 2 tbsp ground cinnamon (1 tbsp for dough + 1 tbsp for topping)
  • 0.5 tsp salt
  • 0.5 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp granulated sugar (for topping)

Instructions

  1. 1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. 2. In a bowl, cream the butter and sugar until light and fluffy. Add egg and vanilla; mix until combined.
  3. 3. In another bowl, whisk flour, baking powder, salt, and cinnamon. Gradually add dry ingredients to wet ingredients until just combined.
  4. 4. Mix together the additional cinnamon and sugar in a small bowl for the topping.
  5. 5. Scoop rounded tablespoons of dough onto prepared sheets, spacing them apart. Roll each ball in the cinnamon-sugar mixture before placing them back on the sheets.
  6. 6. Bake for 10-12 minutes until lightly golden at the edges and soft in the center. Cool on sheets for five minutes before transferring to wire racks.
  7. 7. Drizzle with icing made from powdered sugar and milk if desired.
