Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Gradually add flour and mix until just combined. Divide dough in half; leave one half plain and mix cocoa powder into the other half until smooth.
- Color each portion with food coloring as desired. Wrap in plastic wrap and refrigerate for 1 hour.
- Roll out each dough between parchment paper into rectangles about ¼-inch thick. Stack layers, peel off one side of parchment, and press down gently.
- Roll up tightly from one edge into a log shape. Wrap in plastic wrap and refrigerate again for another hour.
- Slice chilled log into rounds about ½-inch thick and place on baking sheets lined with parchment paper.
- Bake for 10-12 minutes or until edges are golden brown. Cool on wire racks before serving.
