Experience the joy of the holiday season with Christmas Pinwheel Cookies! These vibrant, swirled treats are made from a buttery dough that’s as delightful to create as it is to savor. Perfect for festive gatherings or gifting, each cookie is a burst of color and flavor that embodies the spirit of Christmas cheer.

Ingredients

Scale
  • 2 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter (softened)
  • 2 large eggs
  • 2 tsp vanilla extract
  • ½ cup cocoa powder
  • Food coloring (various colors)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  3. Gradually add flour and mix until just combined. Divide dough in half; leave one half plain and mix cocoa powder into the other half until smooth.
  4. Color each portion with food coloring as desired. Wrap in plastic wrap and refrigerate for 1 hour.
  5. Roll out each dough between parchment paper into rectangles about ¼-inch thick. Stack layers, peel off one side of parchment, and press down gently.
  6. Roll up tightly from one edge into a log shape. Wrap in plastic wrap and refrigerate again for another hour.
  7. Slice chilled log into rounds about ½-inch thick and place on baking sheets lined with parchment paper.
  8. Bake for 10-12 minutes or until edges are golden brown. Cool on wire racks before serving.
