  • 12 large manicotti pasta tubes
  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 cup ricotta cheese
  • 1 cup grated fresh Parmesan cheese (divided)
  • ¼ cup fresh basil or parsley (for garnish)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook manicotti according to package instructions until al dente, then drain.
  3. In a skillet over medium heat, cook chicken for 6-8 minutes per side until fully cooked. Shred or dice once cooled.
  4. In a bowl, combine ricotta, half the Parmesan, garlic powder, salt, pepper, and shredded chicken.
  5. Stuff each manicotti tube with the chicken mixture using a piping bag or spoon.
  6. Spread half the Alfredo sauce in a baking dish; place filled manicotti on top and pour remaining sauce over them. Sprinkle with the rest of the Parmesan.
  7. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15 minutes until bubbly.
