Instructions

  2. Cook rice according to package instructions.
  3. Season chicken breasts with salt and pepper. Heat a skillet over medium heat with oil and cook chicken for about 6 minutes per side until golden brown; ensure an internal temperature of 165°F.
  4. Shred the cooked chicken into bite-sized pieces.
  5. In the same skillet, combine black beans, corn, cooked rice, half of the enchilada sauce, and shredded chicken; mix well.
  6. Transfer to a greased baking dish. Pour remaining enchilada sauce on top and sprinkle with shredded cheese.
