- 9 no-boil lasagna noodles
- 3 cups cooked, shredded boneless, skinless chicken breasts
- 2 cups fresh spinach
- 2 cups Alfredo sauce
- 1 ½ cups shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- 1 tsp garlic powder
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium heat. Sauté chicken until cooked through (about 7-10 minutes), then add spinach until wilted.
- In a bowl, mix chicken and spinach with half of the mozzarella, garlic powder, salt, pepper, and half of the Alfredo sauce.
- Lay out each noodle, spoon two tablespoons of filling on each, and roll tightly.
- Spread remaining Alfredo sauce in a baking dish; place rolled noodles seam-side down.
- Top with remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 25 minutes; remove foil and bake for an additional 15 minutes until bubbly and golden.
