  • 9 no-boil lasagna noodles
  • 3 cups cooked, shredded boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 2 cups Alfredo sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 1 tsp garlic powder
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté chicken until cooked through (about 7-10 minutes), then add spinach until wilted.
  4. In a bowl, mix chicken and spinach with half of the mozzarella, garlic powder, salt, pepper, and half of the Alfredo sauce.
  5. Lay out each noodle, spoon two tablespoons of filling on each, and roll tightly.
  6. Spread remaining Alfredo sauce in a baking dish; place rolled noodles seam-side down.
  7. Top with remaining mozzarella and Parmesan cheese.
  8. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 15 minutes until bubbly and golden.
