  • 4 dried guajillo chiles
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 bay leaves
  • 8 corn tortillas
  • 1 cup Oaxaca cheese, shredded
  • Lime wedges (to serve)
  • Fresh cilantro and diced onion (for garnish)

Instructions

  2. In a large pot over medium-high heat, sear chuck roast chunks until browned on all sides (about 5 minutes per side).
  3. Add blended sauce back to the pot with bay leaves and enough water to cover the meat completely. Bring to a boil, then reduce heat and simmer for about 3 hours until meat is tender.
  4. Remove meat from pot and shred it using two forks; reserve the broth for consomme.
  5. Warm tortillas in a skillet until pliable. Fill each tortilla generously with shredded beef and sprinkle cheese on top before folding.
  6. Serve tacos alongside bowls of reserved broth for dipping, garnished with lime wedges and fresh cilantro.
