  • 34 boneless, skinless chicken breasts (about 1 lb)

  • 1 lb gnocchi (store-bought or homemade)
  • 1 cup heavy cream
  • 2 cups low-sodium chicken broth
  • 2 cups fresh spinach
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • 1 tbsp olive oil

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Sear chicken for about 6 minutes on each side until golden brown. Remove from skillet and let rest.
  2. In the same skillet, sauté minced garlic until fragrant, about 1 minute.
  3. Slice the seared chicken into bite-sized pieces and return it to the skillet along with the gnocchi.
  4. Add chicken broth and heavy cream; stir gently to combine. Bring to a simmer until the sauce thickens slightly.
  5. Stir in spinach until wilted, then add Parmesan cheese until melted. Adjust seasoning if needed.
