Ingredients

  • 1 can (15 oz) organic chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 cloves fresh garlic
  • 1/4 cup freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil (plus more for garnish)
  • 1/2 tsp ground cumin
  • Salt to taste
  • 34 tbsp water or aquafaba

Instructions

  1. Drain and rinse the chickpeas under cold water.
  2. In a food processor, combine chickpeas, tahini, garlic, lemon juice, olive oil, cumin, and salt. Blend until smooth.
  3. Gradually add water or aquafaba until desired consistency is reached.
  4. Taste and adjust salt or lemon juice as needed.
  5. Transfer to a bowl and refrigerate for at least 30 minutes to enhance flavors.
  6. Drizzle with olive oil and garnish with paprika before serving with pita chips or veggies.
