Ingredients

  • 1 lb ground chicken
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup feta cheese, crumbled
  • 3 garlic cloves, minced
  • Zest of 1 lemon
  • 1 cup orzo pasta
  • 2 cups low-sodium chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare ingredients by chopping garlic and parsley, and zesting the lemon.
  2. In a bowl, mix ground chicken, garlic, parsley, feta, oregano, thyme, lemon zest, salt, and pepper until well combined.
  3. Form the mixture into golf-sized meatballs and place on a parchment-lined baking sheet.
  4. Heat olive oil in a skillet over medium heat. Cook meatballs until golden brown on all sides (about 8-10 minutes).
  5. In another pot, bring chicken broth to a boil. Add orzo and cook according to package instructions until al dente (about 8-10 minutes). Drain and reserve some broth.
  6. Stir in fresh lemon juice and zest with a splash of olive oil into the cooked orzo.
  7. Serve meatballs over the lemony orzo and enjoy!
