Description

  • 1 cup eggnog
  • 2 tsp baking powder
  • 1/2 tsp ground nutmeg
  • 1/2 tsp cinnamon
  • 1/2 cup milk
  • 2 tbsp melted butter
  • 1 large egg

Instructions

  1. In a large bowl, whisk together flour, baking powder, nutmeg, cinnamon, and a pinch of salt until well combined.
  2. In another bowl, mix eggnog, milk, melted butter, and the egg until blended.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined; it's okay if there are lumps.
  4. Preheat a griddle or skillet over medium heat and lightly grease it with cooking spray or butter.
  5. Pour ¼ cup of batter for each pancake onto the heated griddle. Cook until bubbles form on top (about 3-4 minutes), then flip and cook until golden brown.
  6. Serve warm drizzled with maple syrup and topped with whipped cream or your favorite toppings.
