- ½ head green cabbage (shredded)
- 2 medium carrots (grated)
- 1 red bell pepper (chopped)
- ½ cup fresh cilantro (chopped)
- 2 tbsp toasted sesame seeds
- ¼ cup low-sodium soy sauce
- 2 tbsp unseasoned rice vinegar
- 2 tbsp toasted sesame oil
- 1 tbsp honey or maple syrup
- 1 tsp garlic powder
Instructions
- Season chicken breasts with salt and pepper. Grill or pan-sear over medium heat for 6-7 minutes per side until golden and cooked through. Let cool before slicing.
- Shred cabbage into thin strips and place in a large bowl.
- Grate carrots and chop bell pepper, then add to the bowl with cabbage.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey or maple syrup, and garlic powder until smooth.
- Add sliced chicken to the salad bowl along with cilantro and sesame seeds. Drizzle with dressing and toss to combine.
- Serve immediately or refrigerate for later enjoyment.
