  • 34 boneless, skinless chicken breasts (about 1 lb)
  • ½ head green cabbage (shredded)
  • 2 medium carrots (grated)
  • 1 red bell pepper (chopped)
  • ½ cup fresh cilantro (chopped)
  • 2 tbsp toasted sesame seeds
  • ¼ cup low-sodium soy sauce
  • 2 tbsp unseasoned rice vinegar
  • 2 tbsp toasted sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tsp garlic powder

Instructions

  1. Season chicken breasts with salt and pepper. Grill or pan-sear over medium heat for 6-7 minutes per side until golden and cooked through. Let cool before slicing.
  2. Shred cabbage into thin strips and place in a large bowl.
  3. Grate carrots and chop bell pepper, then add to the bowl with cabbage.
  4. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey or maple syrup, and garlic powder until smooth.
  5. Add sliced chicken to the salad bowl along with cilantro and sesame seeds. Drizzle with dressing and toss to combine.
  6. Serve immediately or refrigerate for later enjoyment.
