Ingredients

  • 1 lb Yukon Gold or red potatoes
  • 2 bell peppers (mixed colors)
  • 1 large onion

  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Wash and chop the potatoes into bite-sized pieces. Slice the bell peppers and onion into strips.
  2. Heat olive oil in a large skillet over medium heat. Add sliced sausages and brown on all sides (about 5-7 minutes).
  3. Add onions to the skillet and sauté until translucent (about 3 minutes). Toss in chopped potatoes and bell peppers.
  4. Season with garlic powder, oregano, salt, and pepper. Stir well to coat everything evenly.
  5. Cover with a lid and cook on low heat for 20-25 minutes until potatoes are fork-tender.
  6. Stir again before serving hot.
