- 8 large flour tortillas
- 2 cups shredded cheese (cheddar and Monterey Jack)
- 2 cups enchilada sauce
- 1 onion (diced)
- 2–3 cloves garlic (minced)
- 1 tsp cumin
- 1 tsp chili powder
- Olive oil for sautéing
Instructions
- Heat olive oil in a skillet over medium heat. Sauté diced onion and minced garlic until soft (about 3-4 minutes).
- Add ground beef; cook until browned, breaking it apart with a spatula (5-7 minutes).
- Stir in cumin and chili powder; cook for another minute.
- Warm tortillas briefly in the microwave or on a hot pan.
- Fill each tortilla with about ¼ cup of the beef mixture, roll tightly, and place seam-side down in a greased baking dish.
- Pour enchilada sauce over rolled tortillas and sprinkle with cheese.
- Bake at 350°F for 20-25 minutes until bubbly and golden brown.
