Description

  • 1 lb lean ground beef
  • 8 large flour tortillas
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • 2 cups enchilada sauce
  • 1 onion (diced)
  • 23 cloves garlic (minced)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Olive oil for sautéing

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté diced onion and minced garlic until soft (about 3-4 minutes).
  2. Add ground beef; cook until browned, breaking it apart with a spatula (5-7 minutes).
  3. Stir in cumin and chili powder; cook for another minute.
  4. Warm tortillas briefly in the microwave or on a hot pan.
  5. Fill each tortilla with about ¼ cup of the beef mixture, roll tightly, and place seam-side down in a greased baking dish.
  6. Pour enchilada sauce over rolled tortillas and sprinkle with cheese.
  7. Bake at 350°F for 20-25 minutes until bubbly and golden brown.
