Instructions
- Preheat your oven to 350°F (175°C).
- Mash the ripe bananas in a bowl until smooth.
- In another bowl, whisk together eggs, vegetable oil, sugar, vanilla extract, and mashed bananas until creamy.
- Sift together flour, baking soda, salt, and cinnamon in a separate bowl.
- Gently fold the dry ingredients into the wet mixture until just combined.

- Grease mini muffin tins or line with paper liners. Scoop batter into each cup about two-thirds full.
