  • 1 cup broccoli florets
  • 1 cup carrots, julienned

  • 3 tbsp low-sodium soy sauce
  • 2 tsp sesame oil
  • 1 cup protein (optional – chicken, shrimp, or tofu)

Instructions

  1. Cook the lo mein noodles according to package instructions until al dente. Drain and set aside.
  2. While the noodles cook, chop the vegetables into bite-sized pieces.
  3. In a large pan over medium heat, add oil and sauté minced garlic for about 30 seconds.
  4. Add the mixed vegetables to the pan and stir-fry for about three minutes until vibrant and tender-crisp.
  5. Incorporate the drained noodles into the pan along with soy sauce and sesame oil. Toss well to coat.
