  • Author: Jennifer
  • Total Time: 1 hour
  • Yield: Serves 8

Description

Pistachio & Blackberry Cheesecake Towers are a delightful dessert featuring layers of creamy cheesecake, crunchy pistachios, and tart blackberries. Perfect for impressing guests at any gathering.

Ingredients

  • Graham cracker crumbs
  • Unsalted butter
  • Cream cheese
  • Sour cream
  • Powdered sugar
  • Chopped pistachios
  • Fresh blackberries
  • Vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs with melted butter in a bowl and press into the bottom of a springform pan.
  2. Beat room-temperature cream cheese until smooth. Gradually add powdered sugar, then mix in sour cream and vanilla until well combined.
  3. Fold in chopped pistachios and pour the mixture over the crust. Bake for 25-30 minutes until set but slightly jiggly in the center. Cool completely before refrigerating for at least 4 hours or overnight.
  4. For the blackberry compote, cook blackberries with a splash of water over medium heat until they break down into a sauce-like consistency. Sweeten with powdered sugar to taste.
  5. Assemble by cutting the cheesecake into squares or circles, layering with blackberry compote, and topping with additional pistachios.
