Instructions

  1. Cook the chicken by boiling or grilling until fully cooked (165°F/75°C), about 15 minutes.
  2. Chop bell peppers, carrots, and cucumbers into bite-sized pieces.
  3. In a bowl, whisk together lime juice, fish sauce, sugar, and chili flakes for the dressing.
  4. In a large bowl, combine cooled chicken with vegetables and peanuts. Pour dressing over and toss until well coated.
