Ingredients

Scale
  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 head romaine lettuce, chopped
  • 2 ripe avocados, diced
  • ½ cup freshly grated Parmesan cheese
  • ½ cup Caesar dressing
  • 1 cup croutons (preferably garlic-flavored)
  • Juice of 1 lemon

Instructions

  1. Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill for 6-7 minutes on each side until golden brown and juices run clear. Remove and let rest.
  2. While the chicken cooks, wash and chop the romaine lettuce into bite-sized pieces and place it in a large bowl.
  3. Slice the avocados just before serving and toss them gently with lemon juice to prevent browning.
  4. Once the chicken has cooled slightly, slice it into strips. In the bowl with the lettuce, combine chicken, avocado, croutons, and Caesar dressing.
  5. Toss everything together until well-coated with dressing. Top with freshly grated Parmesan cheese before serving.
