  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 1 cup fresh mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, freshly grated
  • 2 tsp Italian seasoning
  • 2 large eggs
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a food processor, pulse the chicken until finely shredded.
  3. In a mixing bowl, combine shredded chicken with mozzarella, parmesan, eggs, Italian seasoning, garlic powder, salt, and pepper. Mix well.
