  • 8 oz penne or fettuccine pasta
  • 8 oz fresh mozzarella cheese
  • 1 cup heavy cream
  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then sear each side for about 5 minutes until golden brown.
  2. Remove the chicken from the skillet and let it rest. In the same skillet, sauté minced garlic until fragrant (about 1 minute). Add heavy cream and chicken broth; stir until combined.
  3. Sprinkle in Italian seasoning and simmer for about 5 minutes until the sauce thickens slightly.
  4. Tear mozzarella into chunks and stir into the sauce until melted.
  5. Cook pasta according to package instructions until al dente; drain well. Toss pasta with the sauce in the skillet until evenly coated.
  6. Slice rested chicken and serve on top of pasta, garnished with parsley if desired.
