  • 4 tbsp butter (melted)
  • Salt and pepper (to taste)

Instructions

  1. 1. Preheat the oven to 350°F (175°C).
  2. 2. In a skillet, melt 2 tbsp of butter over medium heat. Sauté the onion until translucent, about 5 minutes. Add sliced squash and cook for an additional 7 minutes until slightly softened.
  3. 3. In a bowl, whisk together eggs and sour cream until smooth. Stir in cheddar cheese, salt, and pepper. Fold in sautéed squash mixture gently.
  4. 4. Transfer to a greased 9×13 inch baking dish. Mix breadcrumbs with remaining melted butter and sprinkle on top of the casserole.
