- 3 boneless, skinless chicken breasts
- 12 oz penne pasta
- 1 cup fresh asparagus (chopped)
- 8 oz cremini mushrooms (sliced)
- 1 cup heavy cream
- 3 cloves garlic (minced)
- ½ cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 1 tsp Italian seasoning blend
Instructions
- Boil salted water in a large pot. Add penne pasta and cook until al dente (10-12 minutes). Drain and set aside.
- In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper; cook for 6-7 minutes on each side until golden brown. Remove from skillet and let rest.
- In the same skillet, add garlic and mushrooms; sauté until fragrant and mushrooms are tender.
- Add asparagus; cook for an additional 3-4 minutes until bright green.
- Pour in heavy cream and stir in Parmesan cheese. Simmer for about 5 minutes until slightly thickened.
- Slice the chicken and return it to the skillet along with the drained penne. Toss to coat everything in the creamy sauce.
