  • 3 boneless, skinless chicken breasts
  • 12 oz penne pasta
  • 1 cup fresh asparagus (chopped)
  • 8 oz cremini mushrooms (sliced)
  • 1 cup heavy cream
  • 3 cloves garlic (minced)
  • ½ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp Italian seasoning blend

Instructions

  1. Boil salted water in a large pot. Add penne pasta and cook until al dente (10-12 minutes). Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper; cook for 6-7 minutes on each side until golden brown. Remove from skillet and let rest.
  3. In the same skillet, add garlic and mushrooms; sauté until fragrant and mushrooms are tender.
  4. Add asparagus; cook for an additional 3-4 minutes until bright green.
  5. Pour in heavy cream and stir in Parmesan cheese. Simmer for about 5 minutes until slightly thickened.
  6. Slice the chicken and return it to the skillet along with the drained penne. Toss to coat everything in the creamy sauce.
