- ¼ cup butter
- 2 tsp fresh thyme or rosemary, chopped
- 1 cup seasoned breadcrumbs
- 1 tsp paprika
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- Cook chicken in a skillet over medium heat until golden brown (5-7 minutes per side) and reaches an internal temperature of 165°F (75°C). Remove from heat and let cool.
- Boil peeled potatoes until fork-tender, then drain and mash with heavy cream and butter until smooth.
- Stir in shredded cheddar cheese, salt, pepper, and fresh herbs into the mashed potatoes.
- Spread half of the mashed potatoes in the greased baking dish. Layer cooked chicken on top, followed by remaining mashed potatoes.
- Mix breadcrumbs with paprika and sprinkle over the casserole.
- Bake for about 30 minutes until bubbly and golden brown on top.
