  • 1 cup grated sharp cheddar cheese
  • 1 cup fresh spinach, chopped

  • 1/2 tsp baking powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with nonstick spray.
  2. In a bowl, whisk together cottage cheese, eggs, baking powder, salt, and pepper until smooth.
  3. Gently fold in grated cheese and chopped spinach until well combined.
  4. Spoon the mixture into the muffin cups about three-quarters full.
  5. Bake for 20-25 minutes or until golden brown on top.
