  • 1 cup mole sauce (store-bought or homemade)
  • 2 tbsp unsweetened cocoa powder
  • 1 cup chicken stock
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • 1/4 cup toasted pumpkin seeds (pepitas)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté chopped onion and minced garlic until soft and fragrant.
  2. Add chicken thighs to the skillet and brown on all sides until golden.
  3. Pour in the canned diced tomatoes along with their juices and stir to combine.
  4. Stir in mole sauce, cocoa powder, chicken stock, cumin, and cinnamon. Simmer for about 15 minutes.
  5. Just before serving, sprinkle toasted pumpkin seeds on top for added crunch.
