Cheesy Mashed Potato Puffs are crispy, golden bites with a gooey cheese center that will delight your taste buds. Perfect for appetizers or party snacks, they’re a crowd-pleaser!

Ingredients

Scale
  • 2 cups mashed potatoes (creamy and lump-free)
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1 cup breadcrumbs (plain or seasoned)
  • 1/4 cup green onions (chopped)
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a large bowl, combine mashed potatoes, cheddar cheese, green onions, eggs, salt, and pepper until well mixed.
  2. Scoop the mixture using an ice cream scoop; form into 1-inch balls and place on a parchment-lined baking sheet.
  3. Roll each ball in breadcrumbs until fully coated.
  4. Heat oil in a heavy pan over medium heat (about 350°F). Test with one puff; if it sizzles, it’s ready.
