  • 8 oz penne pasta
  • 1 cup bell peppers (mixed colors, chopped)

  • 3 cloves garlic (minced)
  • 2 tsp Cajun seasoning (adjust to taste)
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Chop bell peppers and onions, and mince garlic.
  2. Cook pasta in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  3. In a large skillet over medium heat, brown the sliced Cajun sausage for about 5-7 minutes until crispy.
  4. Add chopped onions and bell peppers to the skillet; sauté for 4-5 minutes until softened.
  5. Stir in minced garlic and Cajun seasoning; cook for an additional minute.
  6. Pour in chicken broth and simmer briefly before adding heavy cream. Let bubble gently for 3-4 minutes until thickened.
  7. Combine the cooked pasta with the sauce, adding reserved pasta water as needed for desired consistency. Mix in grated Parmesan until melted.
