- 12 oz Cajun sausage (sliced)
- 8 oz penne pasta
- 1 cup bell peppers (mixed colors, chopped)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 2 tsp Cajun seasoning (adjust to taste)
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Chop bell peppers and onions, and mince garlic.
- Cook pasta in salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- In a large skillet over medium heat, brown the sliced Cajun sausage for about 5-7 minutes until crispy.
- Add chopped onions and bell peppers to the skillet; sauté for 4-5 minutes until softened.
- Stir in minced garlic and Cajun seasoning; cook for an additional minute.
- Pour in chicken broth and simmer briefly before adding heavy cream. Let bubble gently for 3-4 minutes until thickened.
- Combine the cooked pasta with the sauce, adding reserved pasta water as needed for desired consistency. Mix in grated Parmesan until melted.
